FOOD FRIDAY: KAY'S DISH

This is a new year, and ironically, I'm starting it off "food Friday" with an old recipe that I formed many years ago while surviving on junk food in school. Somehow I managed to get a real food out of some of my mixtures. I call it the kay's dish, since I couldn't form a proper name for it. The recipe, I would say is the joint efforts of my flatmates and I.


We started off by trying to make noodles besides the usual way it was been made. That is,  putting the noodles in hot water and adding the spices that came in the pack and then proceeding to bringing it down when it's done. You see we wanted a bit more nutrients,  since we didn't eat well and often. (We blamed that on the tight class schedule). When we succeeded with noodles, we tried it on spaghetti (pasta) and macaroni. They are similar to noodles so there was no qualms.

It was at this point that I decided to try it out my own way. I decided to use plantain and Irish potatoes. It was the best of all. Just saying, not bragging.  Well, that's to me and my palate sha. Let's get down to the business of the day.

INGREDIENTS:

  • Main substrate e.g. Plantain, potatoes, noodles e.t.c
  • Carrots
  • Green pepper
  • Green beans
  • Tomatoes
  • Fresh pepper
  • Spices (maggi, curry, thyme, salt)
  • Garlic
  • Onions
  • Eggs
  • Groundnut or vegetable oil
RECIPE:
This is for one serving.
  • Take 1 finger of plantain, - ripe or unripe and 2 small Irish potatoes. 
  • Wash, peel and dice them into very tiny cubes.
  • You may boil or fry them depending on your health requirements. 
  • If you boiled them, drain the excess water and leave in a sieve, if you fried them, place on a paper towel to remove excess oil.
  • The noodles, macaroni or pasta, if that's what you want to use, should definitely be boiled.
  • Cut the carrots, green beans, fresh tomatoes, green pepper and onions into the size of tiny peas. 
  • Crush the garlic.
  • Break the eggs (1 or 2 is okay), into a plate,add a pinch of salt and whisk. 
  • In a frying pan or pot, add your groundnut or vegetable oil, allow to heat for a few minutes, then add the onions. 
  • Stir in the garlic, fresh tomatoes, pepper, carrot and green beans.
  • Add your spices to taste.
  • When they are a bit tender,   beat in the eggs and fry till the eggs are done.
  • Pour in the drained main substrate, stir and add the green pepper.
And voila! dinner is served. You can decide to use additional source of protein such as meat or fish. Don't forget your cool drink!
