FOOD FRIDAY --> CRUNCHY BEAN BALLS

Lately I've been thinking and I decided that I needed to organize the way I write my blog posts. This process started after my recent travel to Abuja and my aunt (CEO of Swytfingaz Koncepts) made some bean balls for Saturday breakfast. Normally, I'm not a huge fan of beans but I eat it because I have to. So, that morning after persuading myself, I went to eat, I tasted one and I couldn't seem to stop. It was sooo crunchy!! Immediately I knew I had to share the recipe with my dear readers. After getting her permission, I pulled out my laptop to start typing, that was when the thought occurred to me "why not post it on a Friday and call it 'Food Friday?" So now I decided to rearrange the way I roll out my blog posts. It is as follows;

  • Food or Fashion Fridays
  • Lifestyle/ Health Tips on Tuesday
  • Other issues on Saturday
  • Interior decor on the remaining days (Monday, Wednesday, Thursday)

So to the topic for today, If you live in Nigeria, then you definitely know what I'm talking about. It's the common Akara we all know. Making this meal is not as difficult as it used to seem when I was a child growing up, and without wasting anymore time, I'll go on to the recipe.

INGREDIENTS:

  • 2 cups Beans (Black eyed peas)
  • 1 small Onion
  • Water
  • 1 teaspoon Salt
  • Vegetable oil (preferably cholesterol free)
  • 1 Egg
  • Optional (pepper, other spices)


RECIPE:

  • Measure out 2 cups of beans (black eyed peas)
  • Soak in water to cover the top for a few hours or until the skin can easily be separated from the beans
  • Wash the beans until every skin has been separated. The beans doesn't have to remain intact as the skin holding it together is gone.
  • Blend the beans until fairly mashed, not too smooth
  • Add the whisked egg (you can remove the yolk to reduce the cholesterol content)
  • Add the salt and water to the mix to make it pasty, just the way you mix for your pancakes. We don't want a watery mix
  • Add the diced onions, however if you don't like to see onions in your meal then you can blend it.
  • Add the other optional spices to taste
  • Deep fry! Not for too long, just until it is fairly brown
  • Bring out of the pan and allow to drain.

This meal can be combined with pap or custard to make it even more tasty and filling too.
